Shiitake Corn Dumplings
Vegetarian dumplings with shiitake, roasted corn, and sesame-soy seasoning.

Description
Roasted corn adds sweetness while shiitake provides a meaty bite, making this a strong vegetarian dumpling.
Ingredients
- 30 dumpling wrappers
- 1 1/2 cups shiitake mushrooms, minced
- 3/4 cup roasted corn
- 1 tbsp neutral oil
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 garlic clove, minced
- 1 scallion, minced
- 2 tbsp neutral oil for frying
Preparation
- Cook mushrooms with oil and garlic until moisture cooks off.
- Mix with corn, soy sauce, sesame oil, and scallion.
- Fill and seal dumplings.
- Pan-fry and steam in batches until cooked.
Assembly
- Serve dumplings hot with dipping sauce.
- Garnish with scallion and chili flakes.
Serving Suggestions
- Pair with miso soup.
- Add a quick cucumber pickle.

- Finely chopped tofu can be added for protein.
- Use napa cabbage in place of corn for a less sweet profile.
