Description
Tofu takes on al pastor flavors quickly and pairs well with the flaky richness of scallion pancakes.
Ingredients
- 4 frozen scallion pancakes
- 14 oz extra-firm tofu, pressed and sliced
- 1 tbsp achiote paste
- 2 tbsp pineapple juice
- 1 tbsp soy sauce
- 1 tsp lime juice
- 1/2 cup diced pineapple
- 1/4 cup chopped cilantro
- 1/4 cup diced onion
Preparation
- Marinate tofu in achiote, pineapple juice, soy sauce, and lime for 15 minutes.
- Sear tofu until browned; add pineapple and cook 2 minutes.
- Cook scallion pancakes until crisp.
Assembly
- Fill each pancake with tofu pastor mixture.
- Top with cilantro and onion, then roll.
Serving Suggestions
- Serve with salsa verde.
- Add avocado slices for richness.
Notes or Variations
- Tempeh can replace tofu.
- Add chili flakes for a hotter version.
