Ingredients

  • 1 lb ground pork
  • 1 tbsp neutral oil
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 ripe plantain, diced
  • 1 tbsp butter
  • 1/2 red onion, thinly sliced
  • 1 tbsp lime juice
  • 4 cups cooked rice

Preparation

  1. Quick-pickle onion with lime juice and a pinch of salt.
  2. Cook pork with oil and garlic until browned; add soy sauce.
  3. Saute plantain in butter until caramelized.
