Description

This arepa keeps flavors clean and balanced: salty-sweet miso chicken with fresh cucumber crunch.

Ingredients

  • 2 cups masarepa
  • 2 1/2 cups warm water
  • 1 tsp salt
  • 1 lb chicken thigh, sliced
  • 1 tbsp white miso
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp grated garlic
  • 1 cup cucumber matchsticks
  • 1 tsp sesame seeds

Preparation

  1. Prepare arepa dough with masarepa, water, and salt. Form 6 discs.
  2. Pan-cook arepas 5 to 6 minutes per side until golden.
  3. Cook chicken in a skillet; add miso, soy sauce, honey, and garlic until glazed.
  4. Toss cucumber with sesame seeds and a pinch of salt.

Assembly

  1. Open arepas into pockets.
  2. Fill with miso chicken and cucumber salad.

Serving Suggestions

  • Serve with lime wedges.
