Chili-crisp mushrooms, charred corn, and cotija over rice with lime crema.

Description
A vegetarian rice bowl that combines elote-style toppings with numbing chili-crisp mushrooms.
Ingredients
- 1 lb mushrooms, sliced
- 1 tbsp neutral oil
- 1 tbsp chili crisp
- 1 tsp ground Sichuan pepper
- 1 cup charred corn
- 4 cups cooked rice
- 1/3 cup cotija
- 2 tbsp sour cream
- 1 tbsp lime juice
Preparation
- Cook mushrooms in oil until browned.
- Toss with chili crisp and Sichuan pepper.
- Mix sour cream with lime juice.
- Warm rice and charred corn.
Assembly
- Layer rice, mushrooms, and corn.
- Top with cotija and lime crema.
Serving Suggestions
- Add cilantro and scallion.
- Serve with sliced radish.
Notes or Variations
- Omit cotija for dairy-free version.
- Add black beans for more body.
