Description
A lighter, fast-cook version of al pastor that stays portable and structured inside lettuce leaves.
Ingredients
- 1 lb ground turkey
- 1 tbsp neutral oil
- 1 tbsp achiote paste
- 1 tbsp soy sauce
- 1/2 cup diced pineapple
- 1/4 cup diced onion
- 1 tbsp lime juice
- 12 lettuce leaves (butter or romaine)
Preparation
- Cook turkey in oil until browned.
- Add achiote and soy sauce; cook 2 minutes.
- Stir in pineapple, onion, and lime juice.
- Separate and rinse lettuce leaves.
Assembly
- Spoon turkey mixture into lettuce cups.
- Serve immediately.
Serving Suggestions
- Top with cilantro.
- Add sliced jalapeno for heat.
Notes or Variations
- Ground chicken works well too.
- Add diced avocado for richness.
