Chorizo Egg Breakfast Bao
Scrambled eggs, crisp chorizo, and avocado crema in quick-steamed bao for breakfast prep.

A fast breakfast format built for weekdays. The bao steams while you scramble eggs and crisp chorizo.
Ingredients
- 12 frozen bao buns
- 8 oz Mexican chorizo, casing removed
- 6 large eggs
- 2 tbsp milk
- 1/2 tsp kosher salt
- 1 tbsp butter
- 1/2 avocado
- 2 tbsp plain yogurt or sour cream
- 1 tsp lime juice
- 1 tbsp chopped cilantro
- Hot sauce, optional
Preparation
- Steam bao according to package instructions.
- Cook chorizo in a skillet over medium heat until browned and crisp, 6 to 8 minutes.
- Whisk eggs with milk and salt.
- In another pan, melt butter and softly scramble eggs over medium-low heat.
- Blend or mash avocado with yogurt and lime juice.
Assembly
- Fill each bao with scrambled eggs and chorizo.
- Spoon avocado crema over top.
- Finish with cilantro and hot sauce if desired.
Serving Suggestions
- Serve with fruit and black coffee.
- Great for batch prep: keep fillings separate and assemble fresh.
Notes or Variations
- Swap chorizo for soy chorizo to make it vegetarian.
- Add roasted potato cubes for a heartier breakfast.
