Chipotle Shrimp Fried Rice

Description
Fast fried rice with chipotle heat and sweet corn for a balanced smoky bowl.
Ingredients
- 3 cups cold cooked rice
- 1 lb shrimp, peeled
- 1 tbsp neutral oil
- 1 tbsp chipotle in adobo
- 1 tbsp soy sauce
- 1 cup charred corn
- 2 scallions, sliced
- 1 tbsp lime juice
Preparation
- Sear shrimp in oil until almost cooked.
- Add chipotle and soy sauce; toss 1 minute.
- Add rice and corn, stir-frying until hot.
- Finish with scallion and lime juice.
Assembly
- Spoon fried rice into bowls.
- Top with extra scallion.
Serving Suggestions
- Serve with avocado slices.
- Add cilantro and lime wedges.
Notes or Variations
- Chicken can replace shrimp.
- Use less chipotle for a milder version.
