Birria Potstickers
Crispy-bottom dumplings filled with shredded birria beef and melty cheese.

Description
A dumpling wrapper format for birria flavors with the satisfying potsticker crust.
Ingredients
- 30 round dumpling wrappers
- 2 cups shredded birria beef
- 1/2 cup reduced birria broth
- 1/2 cup shredded mozzarella
- 2 scallions, minced
- 2 tbsp neutral oil
- 1/2 cup water for steaming
Preparation
- Mix birria beef with reduced broth, cheese, and scallion.
- Fill and seal dumpling wrappers.
- Pan-fry in oil until bottoms are golden.
- Add water, cover, and steam 5 minutes.
Assembly
- Remove lid and cook briefly to re-crisp bottoms.
- Serve hot with dipping sauce.
Serving Suggestions
- Dip in consommé plus soy sauce.
- Top with cilantro.
Notes or Variations
- Freeze uncooked dumplings for later.
- Use jack cheese instead of mozzarella.
