Ingredients

  • 30 round dumpling wrappers
  • 2 cups shredded birria beef
  • 1/2 cup reduced birria broth
  • 1/2 cup shredded mozzarella
  • 2 scallions, minced
  • 2 tbsp neutral oil
  • 1/2 cup water for steaming

Preparation

  1. Mix birria beef with reduced broth, cheese, and scallion.
  2. Fill and seal dumpling wrappers.
  3. Pan-fry in oil until bottoms are golden.
  4. Add water, cover, and steam 5 minutes.

Assembly

  1. Remove lid and cook briefly to re-crisp bottoms.
