Ingredients

  • 3 cups cooked short-grain rice
  • 1 1/2 cups shredded birria beef (leftover or prepared)
  • 1/3 cup reduced birria broth
  • 1/2 cup shredded mozzarella
  • 1 tbsp neutral oil
  • 1 tsp chili powder
  • Nori strips
  • Salted water for shaping

Preparation

  1. Warm birria beef with reduced broth until thick.
  2. Keep rice warm for easy shaping.
  3. Wet hands with salted water.
  4. Shape rice around 1 tbsp birria and a pinch of mozzarella.

Assembly

  1. Form tight triangles.
  2. Optional: pan-grill lightly in oil for crisp exterior.
  3. Wrap with nori strip.
